For Volume Two of our Chef Takeover series, we welcome our own Chef Francis Martinez with Dialogue — a two-night experience rooted in connection, where food becomes the starting point.

Inspired by Nikkei cuisine, this menu brings together Peruvian heat and Japanese precision, with a subtle thread of Filipino influence woven throughout. But more than a meeting of cultures, it’s an invitation — to sit, to share, and to engage.

This is a menu designed to be talked over. Passed across the table. Reached for twice.

What to expect:

From seafood that sparks the first exchange, stuffed chicken wings and skewers from the yakitori grill.
Plates arrive, conversations build, glasses are refilled, and somewhere along the way, the table becomes the experience.
